Pumpkin Muffin Recipe

A perfect way to transition into Fall. These muffins are the best combination of moist and dense. This was my first time making muffins and I have to say they turned out amazing. I enjoy them the most they day after - the pumpkin flavor is stronger and they are more gooey. Hope you make them!

Ingredients
- 1 3/4 cups all purpose flour
- 1 cup sugar
- 1/2 cup brown sugar
- 1 tsp baking soda
- 1/2 tsp salt
- 2 tsp cinnamon
- 1 tsp pumpkin pie spice
- 2 eggs
- 1 15 oz can pure pumpkin puree
- 1/2 cup oil, melted
- 1 tsp vanilla extract
Cooking Instructions
- Preheat the oven to 375 degrees.
- Mix dry ingredients together in medium bowl: flour, sugars, baking soda, salt, and spices.
- Mix wet ingredients together in a separate bowl: eggs, pumpkin puree, oil, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and mix until everything is incorporated into the batter.
- Place paper liners into each well of your standard size muffin baking pan and fill the liners until they are nearly full.
- Bake for 20 minutes.
