Pumpkin Muffin Recipe

A perfect way to transition into Fall. These muffins are the best combination of moist and dense. This was my first time making muffins and I have to say they turned out amazing. I enjoy them the most they day after - the pumpkin flavor is stronger and they are more gooey. Hope you make them!

Pumpkins muffins that just came out of the oven.

Ingredients

  • 1 3/4 cups all purpose flour
  • 1 cup sugar
  • 1/2 cup brown sugar
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 2 tsp cinnamon
  • 1 tsp pumpkin pie spice
  • 2 eggs
  • 1 15 oz can pure pumpkin puree
  • 1/2 cup oil, melted
  • 1 tsp vanilla extract

Cooking Instructions

  1. Preheat the oven to 375 degrees.
  2. Mix dry ingredients together in medium bowl: flour, sugars, baking soda, salt, and spices.
  3. Mix wet ingredients together in a separate bowl: eggs, pumpkin puree, oil, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until everything is incorporated into the batter.
  5. Place paper liners into each well of your standard size muffin baking pan and fill the liners until they are nearly full.
  6. Bake for 20 minutes.
